Eating your vegetables doesn't have to be boring. With all the colors and variety of textures, sizes and flavors, fresh vegetables are a natural for temping the palate and creating an attractive main dish. Our new food columnist, Katy G. Wilkens, will be presenting healthy recipes right here in Seniors Digest. And here are some other great sources of recipes that feature ideas for plant-rich dishes:

The American Institute for Cancer Research focuses on the link between diet and cancer. Their weekly "Health-E Recipes" encourage cooks to create dishes that protect against cancer, as well as heart disease, diabetes and many other diet-influenced conditions.
